I don't have a quote, but the scene where the old dog gets shot because it is useless is foreshadowing the death of Lenny where he too is shot in the same way for much the same reason.
The part where George tells Lenny to stay away from Curley and his wife because they will only lead to trouble is also foreshadowing because they do in fact lead to trouble.
